Shrimp and grits began as a coastal breakfast along the Carolinas. Fresh shrimp, simple grits, something filling to start the day. Over time, the dish made its way into restaurant kitchens and picked up richness along the way, becoming one of the most well-loved staples in Southern dining.

At The Edison, Morgan Stumpff has taken that foundation and turned it into one of the defining dishes on our brunch menu, Grits à Ya Ya.

We start with creamy grits, warm and smooth, then layer in Gulf shrimp, smoked bacon, mushrooms, and spinach. The Ya Ya sauce brings everything together, rich and savory with depth, without feeling too heavy. On top, a finish of sweet potato hay adds just the right amount of crisp texture to balance each bite.

It is a dish that feels generous and satisfying from the first forkful to the last. The kind of plate you settle into, slow down with, and end up thinking about the next time you plan brunch. It is one we recommend often, and one our guests return for again and again.
